Sausage Peppers, and Onions: A One-Pan Wonder

- 2 lbs red potatoes, cut into ½” to ¾” pieces
- 2 large bell peppers, cut into 1” pieces
- 1.5 onions, cut into 1” pieces
- 6 hot Italian turkey sausages (20 oz), cut into 5-6 pieces each
- 1 tsp garlic powder
- 1 tsp dried rosemary, crushed
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions
1. Preheat and Prep
- Preheat your oven to 375°F (190°C).
- Grease a large sheet pan or line it with parchment paper.
2. Prepare the Vegetables
- In a large bowl, toss the potatoes, bell peppers, and onions with olive oil, garlic powder, rosemary, salt, and pepper.
3. Bake the Vegetables
- Spread the seasoned vegetables evenly on the prepared sheet pan.
- Bake for 20 minutes in the preheated oven.
4. Add the Sausage
- Remove the pan from the oven and top the vegetables with the sliced sausages.
- Return the pan to the oven and bake for an additional 35 minutes, tossing halfway through for even cooking.
