Sausage Peppers, and Onions: A One-Pan Wonder

  • 2 lbs red potatoes, cut into ½” to ¾” pieces
  • 2 large bell peppers, cut into 1” pieces
  • 1.5 onions, cut into 1” pieces
  • 6 hot Italian turkey sausages (20 oz), cut into 5-6 pieces each
  • 1 tsp garlic powder
  • 1 tsp dried rosemary, crushed
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

1. Preheat and Prep

  1. Preheat your oven to 375°F (190°C).
  2. Grease a large sheet pan or line it with parchment paper.

2. Prepare the Vegetables

  1. In a large bowl, toss the potatoes, bell peppers, and onions with olive oil, garlic powder, rosemary, salt, and pepper.

3. Bake the Vegetables

  1. Spread the seasoned vegetables evenly on the prepared sheet pan.
  2. Bake for 20 minutes in the preheated oven.

4. Add the Sausage

  1. Remove the pan from the oven and top the vegetables with the sliced sausages.
  2. Return the pan to the oven and bake for an additional 35 minutes, tossing halfway through for even cooking.

5. Serve and Enjoy
