Milky Coconut Biscuits – A Kid-Friendly Treat!

Step 1: Prepare the Dough

  1. In a large bowl, beat the softened butter and icing sugar together until light and fluffy.
  2. Add the desiccated coconut, self-raising flour, and milk powder. Mix until well combined.
  3. Gradually add the liquid milk and mix until a soft dough forms.
    • Tip: If the dough is too sticky, sprinkle in a little extra flour. If it’s too dry, add a splash more liquid milk.

Step 2: Shape the Biscuits

  1. Using a spoon or ice cream scoop, portion the dough into small balls.
  2. Roll each ball in extra desiccated coconut to coat evenly.
  3. Place the coated balls on a prepared baking tray, leaving space between each one.
  4. Use a fork to gently press down on each ball, creating a pattern.

Step 3: Bake

  1. Preheat the oven to 170°C (340°F).
  2. Bake the biscuits for 18 minutes, or until they are slightly golden brown.
  3. Remove from the oven and let them cool on the tray for a few minutes before transferring to a wire rack.
