For the Chocolate Cake:
- 1 ¾ cups (220g) all-purpose flour
- ¾ cup (90g) unsweetened cocoa powder
- 1 ½ tsp baking powder
- 1 ½ tsp baking soda
- 1 tsp salt
- 2 cups (400g) granulated sugar
- 2 large eggs
- 1 cup (240ml) buttermilk
- ½ cup (120ml) vegetable oil
- 1 tsp vanilla extract
- 1 cup (240ml) boiling water
For the Ganache:
- 8 oz (225g) dark chocolate, finely chopped
- 1 cup (240ml) heavy cream
- 2 tbsp (28g) unsalted butter
For the Filling:
- 1 cup (240g) mascarpone cheese
- ½ cup (60g) powdered sugar
- 1 tsp vanilla extract
Step-by-Step Instructions
Step 1: Prepare the Cake
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch (23cm) round cake pans with parchment paper.
- In a large mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the sugar, eggs, buttermilk, oil, and vanilla extract until smooth. Gradually combine the wet ingredients with the dry ingredients.
- Stir in the boiling water until the batter is smooth and slightly thin.
- Divide the batter evenly between the prepared pans. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
