  • Pour in the beef broth, then add bay leaves and thyme sprigs.

6. Return the Roast & Add Vegetables

  • Place the seared roast back into the pot.
  • Arrange carrots and potatoes around the meat, ensuring they are partially submerged in the broth.

7. Slow Cook

  • Cover the pot and bake at 350°F (175°C) for 2½ to 3 hours, or until the meat is tender and easily shreds with a fork.

8. Garnish & Serve

  • Remove from the oven, discard bay leaves and thyme sprigs.
  • Garnish with fresh parsley or cilantro before serving.
