6. Return the Roast & Add Vegetables
- Place the seared roast back into the pot.
- Arrange carrots and potatoes around the meat, ensuring they are partially submerged in the broth.
7. Slow Cook
- Cover the pot and bake at 350°F (175°C) for 2½ to 3 hours, or until the meat is tender and easily shreds with a fork.
8. Garnish & Serve
- Remove from the oven, discard bay leaves and thyme sprigs.
- Garnish with fresh parsley or cilantro before serving.
