Classic Pot Roast Recipe

1. Prepare the Meat
- Season the chuck roast generously with salt and black pepper on all sides.
2. Sear the Roast
- Heat olive oil in a Dutch oven or a large heavy-bottomed pot over medium-high heat.
- Sear the roast on all sides until browned, about 15 minutes total. This helps seal in the moisture and flavor.
- Remove the roast and place it on a plate to rest.
3. Cook the Aromatics
- In the same pot, add the onion and garlic to the remaining fat.
- Sauté until the onion turns translucent (about 2–3 minutes).
- Stir in the tomato paste and cook for 1 minute.
- Sprinkle in the flour and stir to absorb the oil and moisture.
4. Deglaze the Pot
- Pour in the red wine, whisking to scrape up any flavorful bits from the bottom.
- Let it simmer for 1–2 minutes to reduce slightly.
